ABOUT THE PRODUCER
Conservas Braseadas Gueyumar is the work of chef Abel Alvarez of Michelin-starred seasonal restaurant Gueyu Mar in Playa de Vega, Spain. The finest seafood are chargrilled at the restaurant using a mix of birch woods, beech, oak and eucalyptus and then canned in 100% Arbequina olive oil from Castillo de Canena. From the grill to the can, it is a complex and painstaking process of hand labor that results in absolutely exquisite conservas.
